IN THE WINERY
Fifty percent of the juice was fermented in stainless steel to capture the clean fruit flavours. A portion was fermented on skins ad
ding to the colour and intensity of the wine. The remainder was fermented in older oak barrels to broaden the palate and add complexity. Extended lees contact was used to enhance the palate and structure.
The grapes were grown at our home, Boyd and Blairpatrick blocks where the crop is kept low to enhance flavours. The fruit was harvested by block to maintain each site's unique character.
